I get really put off when I read a recipe and it has endless ingredients – not because I mind lots of ingredients, but most day to day meals can be and are delicious without being overly complicated. Ask yourself, do the additional 5-12 ingredients actually add anything? Generally 5-8 ingredients for a soup is enough to make it simply tasty…. Likewise if you are reading this recipe and only have a bit of broccoli and a cauliflower feel free to add another veg to make up the difference – potato would be the obvious in this case!
CAULIFLOWER AND BROCCOLI SOUP
simple broccoli and cauliflower soup (serves 4)
1 tbsp coconut oil
1-2 onions chopped
2-3 cloves of garlic, chopped or pressed
1 small broccoli, cut into 1 inch pieces
1 small cauliflower, cut into 1 inch pieces
750ml- 1 litre vegetable stock – it should cover the vegetables
salt & pepper to taste
parsley – optional
cheddar cheese – optional
Saute the onion and garlic in the coconut oil (or olive oil if you don’t have it) until softened. Add the cauliflower, broccoli and stock and bring to boil then simmer for 20mins. Add parsley, salt and pepper to taste and puree. Serve with grated cheese if you wish. Lovely with Rye Bread.
